Chicken Bryan
Ingredients:
1 Tbsp minced garlic
1 Tbsp minced garlic
1 Tbsp minced yellow onion
2 Tbsp butter
1/2 cup dry white wine (I just used white grape juice and it tasted great)
1/4 cup fresh lemon juice
2/3 cup cold butter, sliced
1 1/2 cup chopped sun-dried tomatoes
1/4 cup chopped fresh basil
1/2 tsp kosher salt
1/2 tsp white pepper (you can use black if you don't have white)
6 chicken breast halves
Olive oil
8 oz goat cheese (Goat cheese has a strong flavor so if you don't like it you can substitute another soft cheese...I used brie and it was ok but I am still looking for one that would be a little more flavorful but not as flavorful as the goat...anyone have a suggestion?)
Directions:
Brush chicken breasts with olive oil; sprinkle with salt and black pepper. Grill chicken 15-20 minutes or until cooked through. Just before chicken is done, place equal amounts of cheese on each chicken breast.
While the chicken is cooking saute garlic and onion in 2 Tsbp butter in a large skillet over medium heat until tender. Stir wine and lemon juice into skillet, increase heat to medium high, and simmer to reduce by half. Reduce heat to low and stir in cold butter, one slice at a time. Stir in tomatoes, basil, kosher salt, and white pepper; remove from heat.
Pour the sun-dried tomato sauce over chicken.
I served it with grilled asparagus and mashed potatoes and it was so good.

Hey linfords! Hope you guys are doing well! We're always in grill mode, so we'd love some new recipes to try. I can't believe how big Addie is, she's like a kid already! btw, congrats on the law school plans! on to warmer weather!
mmmmmmm...yum! keep the recipes comin! jared and i have yet to invest in a grill but i feel like it's time. you've inspired me to actually do it! :)
